Exciting meeting today. Though I sill still test the scanners with the tablet I have, I'm pretty sure Raspberry Pi will provide the solution we want. Good thinking Cherise!
It's only ~$43 with shipping for the better model of Pi, not $100, by the way.
1. SD card slot built in:
The SD card is actually what the OS runs off of, so I imagine we could just get a large one (will have to look into limits on size and speed), save the image to that, and then either pop it in another computer or email to ourselves later, when online.
2. Power only requires USB mini, 5v / 700ma. Something like this will do, $7
3. And then here's a hack using the scanner "one-push" button itself to scan (for a Canon)!
Not sure if this will work with our scanners (should test!), but here are a few other hacks along the same "one button" lines:

I've ordered a Raspberry Pi. I have a power cord from an old phone that'll work, cables to go to an HDTV or DVI screen, and a USB mouse and keyboard we can use. We can get a battery pack once we have it working. While I was at it, I also got a "getting started" Raspberry Pi book, a 16GB SDHC card, and an orange case because, well, why not? All came to about $80 in total.
